In addition to the Kyushu staple "grilled sagari," this seasonal course includes "marbled horse sashimi," "Fukuya's spicy cod roe" delivered directly from Hakata, and seasonal ingredients such as "Pacific saury" and "mushrooms"! The motsunabe is made with fresh, plump domestic beef offal, and is made with Rishiri kelp stock and tonkotsu soup for a deep flavor.
